Serves: 6-8 Total Time: 1 hr
Ingredients:
1 lb macaroni
6 tbsp butter
4 tbsp flour
5 cups milk
1 cup heavy cream
1/2 tsp mustard powder
1/2 tsp white pepper
1/2 tsp paprika
1 tsp garlic powder
1/4 lb american cheese
1/4 lb parmesan cheese
1 lb sharp white cheddar cheese (reserve half for topping)
4 oz cream cheese
Instructions:
Preheat the oven to 375°.
Bring water to a rolling boil in a large pot, and then heavily salt the water and cook the pasta about halfway, around 5 minutes. Drain and set aside.
In another large pot (or the same one, if the pasta is done)over medium heat, melt the butter and whisk in the flour. Let this cook for a few minutes, making sure not to burn it.
Whisk in the milk a little bit at a time, combining completely and ensuring there are no clumps before adding more liquid. Add the heavy cream in as well.
Let this come to a very slight simmer before stirring in all the seasonings, followed by the cheeses. Once completely melted, stir in the macaroni.
Pour all of this into a ceramic 9x13 baking dish, and then even top with the remaining cheddar cheese.
Bake for about 45 minutes, or until a golden brown. Let cool at least 10 minutes before serving.
