Plate of farro risotto with shallots and pads of butter

Serves: 4 Total Time: 45 minutes

Ingredients:

  • 2 tbsp salted butter, separated

  • 1 shallot, chopped

  • 2 cloves of garlic, grated or chopped

  • 8 oz farro

  • 1/4 cup dry white wine

  • 2 cups chicken stock, room temp

  • 1/2 cup grated parmesan cheese

Instructions:

  1. Melt 1 tbsp of butter over medium heat in a medium pot.

  2. Sauté shallot until translucent, then add in garlic and cook for 1 more minute.

  3. Add farro to the pot, and cook until there is a slight toasty smell, about 3 minutes.

  4. Deglaze pan with the white wine.

  5. Once wine is dissolved, add in chicken stock, turn the heat to high, and bring to a boil.

  6. Turn the heat down to low, and cover.

  7. After about 35 minutes or after almost all of the liquid is absorbed, uncover and stir in remaining tbsp of butter, followed by the parmesan cheese. Add salt and pepper to taste.

  8. Enjoy your parmesan farro risotto!
