Key Lime Pie Cookies

Makes: 24 cookies Total Time: 1 hour


Ingredients for the Dough:

  • 1 and 1/2 cup salted butter (room temperature)

  • 3/4 cup sugar

  • 3 cups flour

  • 3 tsp cinnamon

Ingredients for the Key Lime Filling:

  • 3 egg yolks

  • 1/2 cup sugar

  • 14 oz can of sweetened condensed milk

  • 1/2 cup key lime juice

Instructions:

  1. Preheat oven to 350°.

  2. In the bowl of a stand mixer (or in any large bowl if you're using a hand mixer), whip butter and sugar until very fluffy. Then, mix in the flour and cinnamon until just combined.

  3. Scoop 1 tbsp portions of dough two inches apart on a parchment lined baking sheet. Use the back of a tablespoon to press a divot into each piece of cookie dough.

  4. Bake these in the oven for 10-15 minutes, or until golden brown around the edges. As soon as they come out of the oven, use another tablespoon to reform the divot you made before baking. Let these cool completely.

  5. While the cookies are baking and cooling, stir together the egg yolks, sugar, and sweetened condensed milk in a small saucepan. Once fully combined, stir in the lime juice.

  6. Heat the saucepan over medium-low to low heat, stirring frequently, until the filling reaches a temperature of 165°. Let this cool to room temperature.

  7. Once both parts of the cookie have cooled, spoon the filling into the center of the cookies, and let cool in the fridge for at least 30 minutes.

  8. Enjoy your key lime pie cookies!
