Goat Cheese, Rosemary & Honey Drop Biscuits

Makes: 10-12 biscuits Total Time: 35 minutes
Ingredients:
1 stick salted butter, plus 2 additional tbsp
1 cup buttermilk
1 and 1/2 tbsp honey, plus one additional tbsp
2 cups ap flour
1/2 tsp baking soda
2 tsp baking powder
1/8 tsp salt
6 oz crumbled goat cheese
3 sprigs fresh rosemary, finely chopped
Instructions:
Pre-heat oven to 450°.
Chill buttermilk in a freezer for about 15 minutes, until very cold.
In a large bowl, combine all dry ingredients, including goat cheese and rosemary.
In a separate, medium bowl, melt the butter until fully liquid, and stir in honey. Then, pour in buttermilk and stir so large clumps of butter come together and create a curdled look.
Pour wet ingredients into the dry ingredients, stirring until just combined - do not over mix.
On a parchment-lined baking sheet, place roughly 2 tbsp scoops of dough 2-3 inches apart.
Bake for 13-15 minutes, or until golden brown.
While the biscuits are in the oven, melt the extra 2 tbsp of butter and combine with the extra tbsp of honey. Brush this over the biscuits when they are fresh out of the oven.
