Makes: 8 Biscuits Total Time: 1 hour
Ingredients for the Biscuit Dough:
1 cup salted butter, frozen
3 and 1/2 cup flour, plus more for kneading
2 tsp salt
1 tbsp baking powder
1 cup shredded sharp cheddar cheese
2 scallions
2 medium cloves of garlic
1 and 1/4 cup buttermilk
1 egg, beaten and set aside
Ingredients for the Garlic Butter Topping:
4 tbsp butter, melted
1 tsp finely chopped parsley
1/2 tsp smoked paprika
1/2 tsp garlic salt
Pinch of cayenne
1 medium clove of garlic, grated
Instructions:
Preheat the oven to 400°.
Finely grate the butter as quickly as you can, and then place this, along with the buttermilk (still separate), in the freezer.
In a large bowl, combine the flour, salt, and baking powder, and set aside.
Thinly slice the scallions and grate the garlic, and then stir this into the dry ingredients
Ensuring that the butter and buttermilk have been in the freezer at least 15 minutes, stir the butter shreds into the dry ingredients, and then stream in the buttermilk while mixing, in an effort to distribute it more evenly.
Turn all of this out onto a floured work surface and use a bench scraper and your hands to press the very shaggy dough together into a rough rectangle about 2-3 inches thick. Use the bench scraper to cut the rectangle in half the short way, then place one half on top of the other, and press down again to form the same size rectangle as before. Repeat this 5-8 times, until the dough is relatively smooth and no big pockets of flour remain. If any big sections of loose flour fall out throughout this kneading process, simply place it between the two halves when stacking them, then form into the rectangle as normal.
Use the bench scraper to cut the rectangle of dough into 8 even squares, then place these on a parchment lined baking tray. Brush the beaten egg over the top of each of the biscuits and then bake for 35 minutes, or until the biscuits are light golden brown.
While the biscuits are baking, combine all the ingredients for the butter topping.
When the biscuits come out of the oven, brush them all over with the garlic butter, and enjoy your flakey cheddar scallion biscuits!
