Serves: 8-12 Total Time: 25 minutes
Ingredients:
1/2 cup salted butter
15 oz pumpkin purée
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tbsp vanilla
1 tbsp pumpkin pie spice
salt 1/4 tsp
1 and 1/2 cups flour
2 tsp baking powder
Instructions:
In a small saucepan over medium heat, heat the butter until foamy and light golden flecks appear. Set aside and let cool until the butter is just warm, not hot.
Pre-heat oven to 350°.
In a large bowl, combine all of the ingredients except the the flour and baking powder and mix until smooth.
In a separate bowl, whisk together flour and baking powder, then add to the wet ingredients. Mix until smooth.
Add one tbsp of batter to each mini muffin pan, and bake until a toothpick comes out clean, about 15 minutes.
