Brown Butter Almond Cookies

Makes: 18 cookies Total Time: 2 hrs
Ingrediants:
1/2 cup salted butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
2 tsp almond extract
1/2 tsp vanilla extract
1 and 1/4 cup ap flour
1/2 cup almond flour
1/2 tsp baking powder
1/2 tsp baking soda
sliced almonds, for topping
Instructions:
In a small saucepan over medium heat, melt the butter and stir every minute or so until it is foamy and the milk solids at the bottom of the pan turn caramel brown. Immediately remove from heat and let cool to room temperature.
In the bowl of a stand mixer, combine the cooled butter and the sugar and whip until light and fluffy. You will likely have to scrape down the sides of the bowl a few times to bring all of the butter to this texture.
Add in the egg, and once combined, add the extracts as well.
Mix in all of the dry ingredients until just combined.
Scoop the dough into 1 tbsp balls, topping each with a few almond slices. Place all of these in the fridge to chill for at least 30 minutes.
Preheat the oven to 350°.
Place the dough a couple of inches apart on a parchment-lined cookie sheet, and bake until golden brown on the edges, around 10 minutes.
